Tolima

A large central Colombian department with steep terrain and smallholder farms. Sweet, citric and consistently good value.

Tolima sits in central Colombia between the central and eastern Andean ranges, with coffee on steep slopes from 1,200 to 2,000 metres.

The profile

Sweet and citric with a balanced body — caramel, orange, red fruit. Between Huila’s roundness and Nariño’s brightness.

The history

Tolima was largely inaccessible to buyers during Colombia’s conflict, and much of its coffee reached market anonymously. Since the peace process, direct trade relationships have developed rapidly and quality has become visible.

Farm size

Very small — many under a hectare — with co-operatives aggregating and marketing. Several have built strong specialty programmes.

Two harvests

Like much of Colombia, a main crop and a smaller mitaca, so Tolima coffee is available fresh for much of the year.

Value

Less famous than Huila or Nariño and frequently cheaper for equivalent cup quality.

Brewing it

Filter or espresso at medium roast. Forgiving and easy to dial.
