Toraja is a mountainous region in the highlands of central Sulawesi, and its coffee sits between Java’s cleanliness and Sumatra’s earthiness.
The profile
Dark chocolate, warm spice, cedar and a hint of dried fruit. Full body, very low acidity, and a smoother, sweeter finish than Sumatran wet-hulled coffee.
Processing
Predominantly wet-hulled, as across Indonesia, but often more carefully executed than in Sumatra — and the difference shows as cleanliness. Some producers now use fully washed processing, which produces a brighter and more conventional cup.
The farms
Very small, on steep terraced ground, farmed by the Toraja people whose distinctive culture and architecture the region is known for. Coffee has been grown here since the Dutch colonial period.
Availability
Limited and inconsistent. Sulawesi produces far less than Sumatra and is harder to source, so it is a rotating rather than a staple offering at most roasters.
Brewing it
Immersion or batch brew, medium to medium-dark roast. It also makes an excellent espresso base where body matters.
