Pache

A Typica dwarf mutation found in Guatemala. Short, easy to harvest, and smoother and flatter than its parent.

Pache is a natural dwarf mutation of Typica, found on a Guatemalan farm in 1949 — the Typica equivalent of what Caturra is to Bourbon.

What it offers

Short stature, so faster picking and denser planting, from Typica stock.

The cup

Smooth with low acidity and a medium body — generally described as flatter and less complex than Typica or Bourbon. That is the usual trade for a productivity mutation.

At high altitude it improves considerably.

Pache Colis

A cross of Pache with Caturra, also Guatemalan, with larger beans and a similar profile.

Where it grows

Guatemala principally, with some plantings elsewhere in Central America.

Brewing it

Espresso or batch brew at medium roast, where smoothness is an asset rather than an absence.
