A Honduran Sarchimor selection that cups unusually well for a rust-resistant variety, and has won Cup of Excellence.
Parainema is a Sarchimor-family variety — Villa Sarchi crossed with the Timor hybrid — selected and released in Honduras.
It is one of the clearest counterexamples to the belief that rust-resistant varieties cup poorly. Parainema lots have won Cup of Excellence in Honduras, scoring above traditional Bourbon and Caturra entries.
Sweet and complex with good acidity and a full body. At altitude with careful processing it is genuinely excellent.
Unusually, it tolerates root-knot nematodes as well as leaf rust, which matters in soils where those are a problem.
Honduras principally, with interest spreading across Central America after the Lempira rust failure.
Early rust-resistant varieties sacrificed cup. Later generations — Parainema, Castillo, Marsellesa, Centroamericano — increasingly do not.
Filter at medium-light roast.

The most transparent cup you can brew for twenty euros, and the least forgiving. Ceramic holds heat where plastic does not — and the open bottom means your pour, not the dripper, decides the coffee.
Best for: Someone who wants to taste what a single-origin coffee is actually doing.

64 mm flat burrs, near-zero retention and a footprint the size of a mug, built for filter and honest about not doing espresso. For pour-over it is the clearest grind you can buy at this price.
Best for: V60, Chemex, AeroPress and batch brewing, where clarity is the whole point.

The best-pouring kettle sold, and the hold function matters more than the thermometer. Expensive for boiling water — but if you brew pour-over daily, it is the accessory that most improves the cup.
