Manchado means stained. A café manchado is a small glass of hot milk stained with a splash of coffee — the mirror image of a cortado.
The proportions
Roughly the reverse of a cortado: mostly milk, with perhaps 15 to 20 ml of espresso.
It is the gentlest coffee on a Spanish bar menu, and it is what people order for children, in the evening, or when they want the ritual without the caffeine.
The Spanish scale
From most coffee to least:
- Café solo — espresso alone
- Cortado — espresso cut with a little milk
- Café con leche — roughly equal parts
- Manchado — milk with a splash of coffee

Regional names
In Catalonia, tallat is a cortado and manxat the manchado. In the Basque Country, ebaki for a cortado.
Making one
Steam 100 ml of milk, pour into a small glass, add 15 to 20 ml of espresso.
