Villalobos

A Costa Rican Bourbon mutation named after the family that found it. Wind-tolerant, delicate, and increasingly replanted.

Villalobos is a Bourbon mutation found on a Costa Rican farm and named after the family who identified it — one of several regional Bourbon dwarfs alongside Caturra, Pacas and Villa Sarchi.

What it offers

Tolerance of wind and exposed high-altitude sites, where more delicate varieties struggle. That matters in Costa Rica’s mountain topography.

The cup

Sweet, clean and delicate with a bright acidity — Bourbon character, expressed lightly.

The revival

Costa Rica’s micro-mill movement gave producers a reason to plant for quality rather than yield, and older regional varieties like Villalobos have been replanted as a result.

The pattern

Every major coffee country found its own Bourbon dwarf: Caturra in Brazil, Pacas in El Salvador, Villa Sarchi and Villalobos in Costa Rica. The mutation is not rare; noticing and propagating it is.

Brewing it

Filter at light to medium roast.

What you need to make it

The equipment this actually requires — not a shopping list, the shortest route to doing it properly.

  • The reference pour-over Manual brewers

    Hario V60 02 Ceramic

    60° cone · spiral ribs · 1–4 cups

The most transparent cup you can brew for twenty euros, and the least forgiving. Ceramic holds heat where plastic does not — and the open bottom means your pour, not the dripper, decides the coffee.

Best for: Someone who wants to taste what a single-origin coffee is actually doing.

    Fellow Stagg EKG Pro

    0.9 L · ±1 °C hold · counterbalanced gooseneck

Best for: Daily pour-over, where flow rate is the variable you are trying to control.
