What grind size for Turkish coffee?

Powder — finer than espresso, like flour. Most grinders cannot reach it.

Turkish coffee needs the finest grind in coffee, finer than espresso by a clear margin.

The texture

Like flour or icing sugar. It should feel smooth between the fingers with no grittiness at all.

If you can feel individual particles, it is too coarse.

Why it must be that fine

The coffee is not filtered. It is boiled in the pot and poured, grounds and all, into the cup, where they settle.

Coarse grounds settle as grit and feel unpleasant. Powder settles as a smooth silt, and it also extracts fully in the three minutes the method allows.

The foam — kaimaki — depends on it too.

What can produce it

Purpose-built Turkish mills — the traditional brass cylindrical grinders. Cheap and they do exactly this.

Some hand grinders with fine burr sets can reach it, slowly and with effort.

Most electric home grinders cannot. Their finest setting is espresso, which is not fine enough.

Blade grinders, oddly, get closer than burr grinders here — run long enough they will pulverise. The distribution is terrible, and for an unfiltered method that matters less than usual.

The easy route

Buy it pre-ground. Turkish coffee is one of the few cases where pre-ground is defensible: the correct grind is hard to produce at home, and it is sold everywhere it is drunk.

Buy small quantities and use them quickly.
