The AeroPress is forgiving, which means people stop measuring — and then it varies.
Weigh and time
Dose by weight, not by the scoop. The scoop varies with grind size and how you fill it.
Water by weight too. The chamber markings are approximate and you cannot see them well when it is full.
Steep time with a timer, not by feel.
The plunge
The commonest source of variation. Pressing hard and fast extracts more and produces a different cup from a slow steady press.
Aim for 20 to 30 seconds of steady, gentle pressure. If it is very hard to push, the grind is too fine.
Stop when you hear the hiss. Pushing past it forces air through the bed and can add bitterness.
Grind
Medium-fine for the standard method, coarser for longer steeps. A hand grinder with a decent burr set makes a much bigger difference here than most people expect.
Temperature
Lower than you think for the standard method — 80 to 85 °C is a common recommendation, because the short brew and the paper filter mean less is needed.
Inverted methods with longer steeps use hotter water.
Pick one recipe
The AeroPress has more published recipes than any other brewer, and switching between them constantly is why it feels random.
Choose one, brew it twenty times, and change one thing at a time.
