Grinding multiplies the surface area exposed to oxygen enormously. Staling accelerates accordingly.
The timescale
Whole beans — good for 4 to 6 weeks in a sealed bag. Ground coffee — noticeably degraded within 30 minutes, clearly stale within a day.
That is not marketing. The aromatics are volatile and they leave.
What you lose overnight
Most of the top notes — the florals, the citrus, the fruit. What remains is the heavier, duller part of the profile.
The coffee will still be drinkable and it will taste flat.
If you must
Airtight, in the fridge or freezer, in as small a container as possible with minimal headspace.
Cold slows the loss and does not stop it. Let it come up to temperature before brewing, or grind straight from frozen if you froze whole beans instead.
The better answers
A hand grinder takes 30 to 60 seconds and is silent. If the reason is not waking the house, this solves it completely.
Weigh the beans the night before and leave them in a covered dosing cup. All the preparation, none of the staling.
Set out everything else — filter rinsed, kettle filled, scale on the counter. That is where most of the morning time goes anyway.
The exception
Cold brew. A 12-hour immersion of coffee ground a few hours earlier is barely distinguishable. The method is forgiving enough that it does not matter.
