No, not on its own — and this is one of the most common well-intentioned mistakes in home coffee.
Why it seems like a good idea
Distilled water has essentially no dissolved minerals, so it cannot deposit limescale. From the machine’s point of view that sounds perfect.
Why it is not
Extraction is not simply hot water dissolving coffee. Magnesium and calcium ions bind to flavour compounds and carry them into solution. They are participants, not contaminants.
Brew with distilled water and extraction drops measurably. The cup tastes thin, flat and hollow — a shadow of what the same beans give with mineralised water. Anyone who has tried it side by side notices immediately.
The second problem
Many machines detect water level or presence by measuring conductivity, and distilled water barely conducts. Some machines will report an empty tank while full, or fail to prime.
What to do instead
If your tap water is genuinely unusable, the answer is not distilled water — it is distilled water plus minerals.
Commercial mineral recipes are sold as sachets or concentrates dosed into a specific volume of distilled or RO water. They give you complete control over the mineral profile, produce excellent coffee, and are a real commitment in effort and cost. This is what competition brewers use.
The simpler answer, for almost everyone, is filtered tap water. It removes chlorine and reduces carbonate hardness while leaving the useful minerals behind.
The middle ground
Some people blend: distilled water cut with a proportion of tap or mineral water to land in a target range. It works, and it requires knowing what your tap water actually contains.

What about reverse osmosis water?
Same issue. RO removes nearly everything, so the water needs remineralising before it makes good coffee. Some RO systems include a remineralising stage for exactly this reason.
Is distilled water safe for descaling?
Descaling uses an acid solution rather than plain water, and the water you mix it with barely matters. Rinse thoroughly afterwards with whatever you normally brew with.
